The wine was tank fermented at cool temperatures to retain freshness and varietal character. The final blend consisted of the best portion of the three Sauvignon Blanc blocks of Five Ashes vineyard. The wine was then stabilized and clarified prior to bottling.
The Sauvignon Blanc 2000 is ready to be drunk early and has a cellaring potential of up to 3 years from bottling.
The 2000 Sauvignon Blanc is a refreshing zestful and flavoursome unoaked dry wine with grassy and gooseberry flavours. It is a lovely fresh wine with abundant fruit on the nose and palate and a crisp dry finish. This zesty unoaked wine can be enjoyed with seafood, salad and white meat.
